Для рецепта потребуется:
280г муки200г фиников150г грецких орех200г размягчённого сливочного маслачайная ложка разрыхлителячетверть чайной ложки соли2 яйца200мл молока
130 грамм сахара
Муку смешиваем с солью и разрыхлителем. Отдельно взбиваем размягченное сливочное масло с сахаром (предпочтительно коричневым, он менее сладкий и более богатый по вкусу). Взбиваем несколько минут до пышности и растворения сахара.По одному вбиваем в эту массу яйца, каждый раз хорошо перемешивая.
Теперь миксер за ненадобностью убираем в сторонку. Вооружаемся лопаткой и вводим в масляную смесь не слишком мелко порезанные финики и порубленные орешки. Естественно той самой лопаткой и перемешиваем, распределяя все по смеси равномерно.В два приема поочередно вводим в смесь молоко и муку, каждый раз хорошо перемешивая лопаткой.Готовое тесто распределяем по жаропрочной форме, смазанной сливочным маслом и присыпанной мукой. Отправляем в разогретую до 180 градусов духовку выпекаться до готовности. Приблизительно на 1 час.
Готовность определяем привычным способом… на спичку. Если сверху кекс насчет подгорать, а готовность будет задерживаться, накрываем фольгой. Готовый кекс остужаем на решетке.При желании сверху можно присыпать сахарной пудрой или покрыть глазурью.И можно подавать. Сказать правду, понять, что это приготовлено из фиников довольно сложно. Вкус очень богатый, но не фруктовый. Немного карамельный, естественно ореховый. По цвету тоже очень аппетитно, карамельно-шоколадно. Про вкус… очень! Просто очень!
