страны на столе непременно присутствуют мандарины.
Варенье очень ароматное, кисловато-сладкое. Идеально подходит для
прослаивания коржей для торта и для заполнения рулетов.
СОСТАВ
корочки с 1кг мандаринов,
3 крупных яблока (400~500г),
3/4 стакана сахара (150г),
1,5 стакана воды (375г),
сок 1 лимона (~60г)
Для варенья нужно использовать корочки без горького привкуса.
Перед тем, как снять с мандаринов кожицу, их очень тщательно вымыть.
Если корочки будут собираться несколько дней, оставлять их на воздухе,
чтобы они подсыхали, но не гнили. Подсушенные корочки перед приготовлением
варенья замочить на 30 минут в воде.
Яблоки очистить от кожицы и семян. Нарезать небольшими кусочками.
Положить яблоки в посуду для варки варенья (эмалированную посуду не
использовать).
Налить полстакана воды и насыпать сахар.
Варить на небольшом огне до размягчения яблок – примерно 15 минут.
Мандариновые корочки мелко нарезать.
Из лимона выжать сок и выбрать косточки.
Размягчённые яблоки измельчить до состояния пюре – размять толкушкой или
протереть через дуршлаг или взбить погружным миксером.
Положить в яблочное пюре мандариновые корочки, влить лимонный сок и один
стакан воды.
При желании для придания варенью яркого жёлтого цвета можно добавить
щепотку куркумы.
Довести варенье до закипания, огонь убавить до минимума, накрыть посуду
с вареньем крышкой.
Варить при периодическом помешивании 15 минут.
Осторожно! Варенье при варке сильно брызгается. Поэтому для помешивания
нужно лишь немного приоткрывать крышку.
Разложить варенье по обваренным банкам.
Для длительного хранения банки герметично укупорить и положить
на 2~3 дня под тёплое одеяло.
Если варенье планируется сразу же начать употреблять, то банки
не укупоривать, а закрыть негерметичными крышками. После остывания
убрать в холодильник.
Выход: примерно 750 миллилитров.
