Мне безумно понравилось
варенье из грейпфрута. Но из большого количества грейпфрутов
получается очень мало варенья. Поэтому я решила поэкспериментировать и
подобрать какую-нибудь ягоду, которая будет добавлять варенью объём, но не
будет забивать вкус и аромат грейпфрута.
Варенье получилось очень хорошее. Сильный цитрусовый аромат. Во вкусе
присутствует горчинка, но её меньше, чем в варенье из одного только
грейпфрута.
Цвет у варенья тёмно-бордовый. Думаю, более интересный цвет получится,
если использовать не синюю, а белую сливу.
После остывания варенье загустевает до консистенции мягкого масла.
СОСТАВ
500г слив без косточек,
3 крупных грейпфрута (1,3~1,5кг),
1 лимон (130~150г),
600~700г сахара
Вынуть из грейпфрутов мякоть.
Это можно сделать, разобрав грейпфрут на дольки и очистив каждую дольку
от плёнок.
Также можно разрезать грейпфрут поперёк и вынув мякоть маленькой ложкой.
Удобнее всего извлекать мякоть при помощи специальной ложки для
вырезания шариков из овощей.
Взвесить очищенную мякоть.
На средней тёрке натереть цедру (окрашенную часть шкурки) лимона.
Положить сливы, цедру лимона и мякоть грейпфрутов в блендер.
Выжать туда же сок из лимона, выбирая при этом косточки.
Взбить до получения однородной массы.
Кастрюлю сполоснуть холодной водой.
Перелить получившееся пюре в кастрюлю.
Насыпать сахар, вес которого равен половине суммы веса слив и
мякоти грейпфрутов.
Поставить кастрюлю на средний огонь, довести до кипения и снять пену.
Огонь убавить и кипятить без крышки до упаривания массы в 1,5~2 раза.
Перед окончанием варки попробовать варенье и при необходимости дополнительно
положить сахар по вкусу.
Выход: 750мл (при уваривании чуть более, чем в 1,5 раза).
