Огурцы с помидорами по-корейски на зиму – отличная закуска, которая просто готовится и хорошо хранится до следующего овощного сезона. Подать затем такую закуску можно к гарниру или мясному, рыбному блюду. По желанию можно сделать овощи более пикантными, добавив жгучий перец, красный, душистый и черный молотый перец.
Ингредиенты
- 1 кг огурцов
- 1 кг помидоров
- 3-4 зубчика чеснока
- 10 г соли
- 30 г сахара
- 5 г молотого кориандра
- 5 г черного молотого перца
- 70 мл столового уксуса
- 100 мл растительного масла
Выход: 3 баночки по 500 мл.
Приготовление
1. Подготовьте овощи – тщательно все помойте, оборвите хвостики у помидоров, обрежьте огурцы с двух сторон и проверьте на горечь. Отмерьте нужное количество соли, сахара, специй, растительного масла и столового 9 % уксуса.
2. Огурцы нарежьте соломкой или половинками кружочков – если овощи небольших размеров.
3. Помидоры нарежьте дольками, попутно удаляя место, где крепилась плодоножка.
4. Нарезанные овощи переложите в большую миску или кастрюлю с крышкой.
5. Чеснока можно взять чуть больше или чуть меньше, чем указано в рецепте. Снимите с зубчиков шелуху и пропустите чеснок через специальный пресс. По желанию можно и мелко нарезать чеснок, особенно, если нет пресса.
6. Теперь насыпьте к овощам соль, сахар, черный молотый перец и молотый кориандр.
7. Залейте овощи растительным маслом без яркого вкуса и запаха, а также столовый уксус. Все перемешайте, накройте миску (кастрюлю) крышкой и поставьте ее в холодильник на 5-6 часов, хотя можно и на ночь.
8. Банки для заготовок помойте, используя пищевую соду, затем тщательно ополосните. Наполните банки закуской, тщательно утрамбовывая овощи. Разлейте остатки маринада.
9. На дно кастрюли постелите чистую тканевую салфетку, поставьте на нее банки, накройте их крышками. Долейте воду до «плечиков» банок и поставьте кастрюлю на плиту. После закипания воды стерилизуйте заготовки в течение 10 минут.
10. Закатайте банки, опрокиньте и укутайте на сутки-двое. Затем переставьте для хранения в прохладное темное место.
