Я заметила, что когда дольки молодых кабачков подвяливаются в
духовке, они приобретают красивый вид, похожий на дольки лимона или
апельсина. Только цвет и вкус у них другой.
Тогда я решила придать кабачкам лимонный вкус и посмотреть, что из этого
выйдет.
Получились отличные цукаты. Жёлтого яркого цвета, приятного
кисловато-сладкого вкуса, с ароматом лимона. На просвет почти прозрачные.

СОСТАВ
1 молодой кабачок (200~250г), небольшой лимон, 0,5 стакана сахара,
1/3 ч ложки куркумы

Кабачок вымыть и порезать дольками толщиной 0,5~0,7см.

С лимона счистить цедру (окрашенный слой кожуры) и отжать сок. Должно
получиться 70~80г сока.
В эмалированную кастрюлю налить сок и положить сахар, цедру и куркуму.

Довести до кипения.
Положить дольки кабачка и хорошо перемешать, чтобы каждая долька была
покрыта сиропом.

Опять довести до кипения и варить 0,5~1 минуту.
Снять с огня и оставить остывать, периодически осторожно перемешивая
дольки.

Остывшие дольки откинуть на дуршлаг.
Противень застелить бумагой для выпечки и выложить на него дольки
кабачка в один слой.
Поставить в духовку при t=100~130°C до подвяливания – примерно на 30
минут.
Если у духовки есть функция вентилирования, то её включить, а дверцу
духовки немного приоткрыть.
