СОСТАВ
1/2~2/3 стакана мелко порезанных корочек (апельсинов, лимонов или
мандаринов), 1/2 стакана сахара
1-й СПОСОБ
Плоды (апельсины, лимоны или мандарины) вымыть горячей водой со щеткой
под краном.
Снять кожуру и положить в холодную воду. Выдержать в воде, меняя ее
3~4 раза в сутки, три дня.
Воду хорошо слить. Порезанные корочки положить в кастрюлю и всыпать
сахар.
Варить на слабом огне при помешивании до полного испарения воды.
Сахарные корочки выложить на покрытый пергаментом противень в один
слой и подсушить при t=80°С.
2-й СПОСОБ
Этот способ более быстрый, здесь не требуется трехдневное вымачивание.
Корочки положить в кастрюлю, залить водой и варить 1 час, трижды меняя воду
на другую.
Воду хорошо слить, насыпать сахар и далее действовать по первому способу.
